Vintage 2007 R.D.
Bollinger R.D. 2007 is made of grapes from fourteen crus, 91% of which with a grand cru status, the other nine are premier cru. Vintage 2007, two-thirds of which pinot noir, was vinified in oak barrels and allowed a very long aging time after second fermentation.
R.D. stands for Récemment Dégorgé: recenty disgorged, or: extra aged in cellar. Only the very best vintages are allowed twelve years of aging in the Bollinger cellars.
A true feast for the connoisseur: expect dried fruit, brioche, honey, toasted nuts and spices in aroma and flavour. A fantastic glass now, a patient champagne for more bottle aging.
Serve this champagne in a wide glass and take your time. A wonderful companion to a dish with lobster or halibut.
