Every year Jerôme Dehours takes out one third of the wine in his solera system, or réserve perpétuelle, which he started in 1998. This part ends up in the bottle under the name Trio S: a nicely aged blend of equal parts meunier, chardonnay and pinot noir. Next the solera is supplemented with wine from the latest vintage.
Trio S is a wonderfully complex champagne with hints of ripe stone fruit and toast. Try it, sip by sip, with lobster, a rich fish dish or other food with a full, slightly creamy mounthfeel.
