Chardonnay champagne made of fruit from vineyards in Avize and the Marne valley. Fermentation takes place mostly in stainless steel, with 25% in large oak barrels. Malolactic fermentation is allowed, and before degorgement the champagne rests on it lees for close to two years. One third is reserve wine from the solera system that Étienne started in 2011, in which older and younger vintages are blended continuously.
Wonderful as an aperitif, or serve it with some light food.
