In 2010 Étienne Calsac planted grape varieties rarely seen in Champagne, in a small vineyard in Côte de Sézanne: pinot blanc, arbane, petit meslier. The grapes ferment with indigenous yeasts in large oak casks. After second fermentation the champagne stays on lees for thirty months.
