Mailly Champagne is mainly located in Mailly Grand Cru (Montagne de Reims) and is composed of 35 lieux-dits, in a total of 70 hectares. In total, the vineyards make 75% pinot noir and 25 % chardonnay.
The house has done a lot of research about the soil, aspect and climate of its vineyards, in order to give the best of the terroir.
The grapes are harvested, pressed and vinified separately in small tanks or casks. The finished cuvée is then laid to rest in the cellar, buried 19 metres underground in the cool, silent ambiance of the famous crayères.
